Several months ago I began eating a lot more vegan dishes, and I have to declare, I was pleasantly surprised at how delish these dishes can be. My worry was that they would be bland and leave me hungry. Nothing could have been further from the truth!
I’ve become a huge fan of cauliflower. Well, I’ve always liked it, but now I love it! I love its crunchy texture. And it features prominently in two of my new favorite recipes.
Buffalo Cauliflower and Chickpea Pita Pockets with Homemade Ranch Sauce
The name says it all, but it leaves out a few things: baby spinach leaves., carrots, celery, vegan mayonnaise (which has avocado oil in it!!!), garlic, and Dijon mustard to name a few. This meal is one of my very favorites! I especially love the homemade Ranch Sauce.
The texture is wonderfully crunchy but not overly so. And the taste is delightfully spicy but not hot. Love!
Moroccan Style Cauliflower Rice with Apricot, Chickpeas, and Almonds
This is another favorite. It also includes carrots, ginger root, garlic, and cinnamon. I enjoyed the baby spinach leaves so much, I added those as well. (Plus, it needed something green, if you ask me.)
The Cauliflower rice was a bit confusing to me. All that means is that you process the cauliflower in the food processor until it’s the size of rice. Clever idea! It creates a light crunch texture in the meal.
